Lemon Chili Avocado Egg Salad for a Sandwich
I am trying several new ways to use avocados to replace mayonnaise. Today I tried egg salad and I was even able to use cilantro in this one, which is NOT one of my favorites. I hope you enjoy it as much as I did.
2 ripe avocados, halved and pitted
Juice of 1 lemon or 1 lime
1/2 tsp salt
1/3 tsp pepper
1 tsp dried chili flakes
3 hard boiled eggs, cooled
1/2 a small red onion, finely chopped
Cilantro, chopped for topping
4 slices of bread or bagels
Scoop the flesh out of the avocado and place in a bowl with shelled eggs. Add lemon juice, salt, pepper, chili flakes and onion. Mash well. Toast bread or bagels. Top with avocado mix and cilantro. You can add diced tomatoes, feta cheese or cooked slice chicken to this if desired.
