Broccoli Cheddar Cheese Soup

Here is a thick and creamy soup to start off your meal or have with a sandwich.

Ingredients:

1 small onion, diced

3 Tbsp butter

1 1/2 Tbsp cornstarch

2 cup chicken stock

1 cup cream (can substitute stock if you want to cut the cream out)

3/4 cup grated cheddar cheese

1/2 cup green onions

salt and pepper to taste

dash of cayenne pepper, optional

1-2 cups lightly steamed chopped broccoli

Directions:

In a saucepan, sauté onion in butter for 5 to 7 minutes. Blend corn starch into chicken stock and cream. Add to onions. Cook until thick. Add cheese and stir until melted. Add 1/4 cup green onions and warm broccoli, salt and pepper to taste, and cayenne if desired. Garnish with remaining green onions. Can also add corn chips to the bowl.
