This is an interesting new flavor I tried on my family on Labor Day weekend. It would go well with a BBQ.
3 tablespoons fresh lemon juice
3 tablespoons olive oil
2 teaspoons honey
2 green onions, finely chopped
1 Fresno chile, thinly sliced
salt & freshly ground black pepper
3 ripe peaches or nectarines, cut in wedges
1 avocado, cut in wedges
½ cup fresh mint, chopped
¼ cup pistachios, chopped
Whisk together lemon juice, oil, honey, green onion, and chili in a medium sized bowl. Season with salt & pepper. Add peaches and toss to coat. Let sit at least 15 minutes but no longer than one hour.
Just before serving, add avocado and mint. Toss to combine. Top with pistachios.
Makes 8 servings.
